Tuna Antipasto

 

Ingredients:

  • 16 oz. chunk tuna
  • 8 oz steamed cauliflower
  • 100 gr green olives
  • 100 gr mushrooms
  • 1 carrot
  • 1/2 green pepper
  • 1/2 yellow pepper
  • 1 celery stick
  • 1/2 cup raisins
  • 1/2 cup olive oil
  • 1/2 cup ketchup
  • 1/2 cup white vinegar
  • 1 tbsp sugar
  • Juice from 1 lemon
  • Salt to taste

Preparation:

  • Mince the tuna.
  • Cut the olives, mushrooms, green pepper, yellow paprika, white onion, and celery into small pieces.
  • Grate the carrot.
  • Steam the cauliflower, and cut it into small branches.
  • In a large bowl cup add all the these ingredients after chopping them.
  • Add the raisins, olive oil, tomato sauce, salt, sugar, white vinegar and lemon.
  • Mix all the ingredients and enjoy with chips or a sandwich.
