Cranberry Walnut Rice


  • 2 cups of white rice
  • 1 cup of sweet corn
  • 6 chopped chives
  • 1 bunch of chopped cilantro
  • 1/2 cup of cranberries
  • 1 cup of red pepper. diced
  • 1 cup of green pepper, diced
  • 1 cup crushed walnuts
  • 1/2 cup of vegetable oil
  • Juice of 1/2 lemon
  • 1/2 cup of soy sauce
  • Salt to taste


  • In a large bowl, add the corn, chives, cilantro, cranberries, walnuts, red pepper, green pepper, walnuts, oil, lemon and soy sauce.

  • Mix all the ingredients.

  • Prepare white rice (recipe here).
  • When the rice is ready, stir all the ingredients with the rice and serve.
